Cooking during the Pandemic and other things........



We installed an Luxury Vinyl Planking floor in the basement and downstairs bedroom closet with all of our free time.......I think we did a pretty good job!

 During the 'lock down' we entertained ourselves with cooking, puzzles, hiking, walking, tv bingeing, and other things.  Arn tried his hand at somethings we haven't had in a while and we tried some new things.  He even tried making brioche bread which turned out fair.  We did a few puzzles until the weather got nice. I finished some quilts. We also ripped out the basement carpet, had Tim paint the basement rec room and bathroom, and got new carpet on the main 2 floors of the house.




I also make Mere some surgical caps for work and made a couple dozen cloth face masks.

Arn's Turkey Pot Pie


He's done it again......Arn made a beautiful turkey pot pie with homemade crust from Thanksgiving leftovers.....It was absolutely delicious!

Cioppino



One of our holiday traditions is having cioppino on Christmas Eve. We started the tradition we we lived in Salt Lake City when we didn't have any family coming for the holidays. It was easy, we could do it ahead of time (we usually would ski on Christmas Eve), and the everybody liked it. Arn usually makes the base the day before and we serve it with crusty bread.

We also have lots of appetizers. Arn is starting the cioppino today.....we'll let you know how it turns out.

Donut Time with Meredith and Tim
































Meredith and Tim came to visit for the weekend since it was colder and snowy in Crested Butte. We had our first snow snowfall on Sat. (see previous post) but it started melting Saturday afternoon. They went to Garden of the Gods in the afternoon and we all went to O'Malley's for dinner. Yum! Sunday morning we made donuts which were delicious. Later, we hiked up to the reservoirs in Palmer Lake. It was a short visit but fun.





Quick and Easy Donuts (no recipe needed) - 1 can Reduced Fat Buttermilk Grand Biscuits (makes 8),Fry Daddy or Fry Baby,Oil


For jelly donuts, fry slighty longer so they aren't doughy in the center. Place on paper towels, let cool. Make a hole in the side of the donut and full with jam or jelly. We used a large syringe but a small spoon or other tool would work. Frost or roll in powdered sugar.

Decorate the other donuts as desired - roll in cinnamon and sugar, frost and sprinkle.

The donuts were delicious and better than 'store-bought' donuts!
