Nick and Noah

Last week Nick and Noah were in Breckinridge for  skiing and fun.  We went up on Wednesday and ate lunch and walked around town.  Thursday we skied all day with them and Chris.  We hadn't been to Breck in many years and now have a new appreciation for the resort.  Arn was happy to ski with Chris for a couple of runs and got to ski the Whale's tail.  Hopefully next year Val, Tyler , and Mere get to see them too if they come on the weekend.

The Banks return to Colorado


Stacy, Bryan, and the kids have returned to Colorado.  It is great to have them back in town.  Cate wants to learn to crochet so lessons have started.  I'm even working on a couple of projects (helps me to stay awake in front of the TV!).

Mike and Joy came for a visit last week and we took them to Crested Butte for 3 days of downhill, their first Nordic Ski experience, and a hike at Red Rock Canyon (5.7 mi.) after we got home.
It was a fun week with great weather with good friends.

Another Fav - Baked Oatmeal

The texture of oatmeal isn't one of my favorite things and after eating a similar dish at a local coffee shop I been making baked oatmeal.  I adjust the recipe according to what I have in the pantry.
Baked Oatmeal
2 tbsp melted butter, 2 cups oats, 1/2 cup brown sugar (or maple syrup), nuts, seeds, 1 tsp baking powder, 1/2 tsp salt, 1 1/2 cup milk, 1/4 cup applesauce, 1 egg, fresh fruit
Bake at 375 for 15-20 min. depending on the texture desired.
I've also added dried fruit, protein powder, chia seeds, bran, whatever you have.
Place in a bowl of warm frothed milk and add a dollop of yogurt and fresh fruit.

Arn doesn't like oatmeal and he likes this!

Valentine Getaway


















 Our passes this year came with some days at Steamboat. It's been over 30 years since we've been there so we left early on a Monday morning and did the 3.5 hr. drive.  We skiied Monday, Tues, and Wed. morning. It was nice to get away even though the snow wasn't the best.  Gma went out to eat with Stan and Bea, spent a couple of hours with Rachel playing cards, had her favorite Valentine meal with Mere (spaghetti), and went to lunch and bingo with the Seniors.  One place we will return to if we get back there is Mahoghany Ridge Brewery. They have great food and a great happy hour!

Copper Mountain

We've been skiing Copper more often this year and can get there in two hours.  Our friend Per has gone with us a few times.  This dead tree is on one of our favorite runs.  I think it is a bristle cone pine and it's neat how the trunk is all twisted from the wind.  We've been checking out happy hour spots on the way home too.
