I don't know why but people in and around Colorado Springs like climbing up inclines. Castle Rock which is about 20 min. north of us has a great new park with a mini incline. It is 200 steps with a trail down. It is well used and a good place to stop for some quick exercise. It is right off I 25 on Plum Creek Parkway in the Phillip S. Miller Park.
I've been trying to do it a couple of times when I am in the area and I'm at 50 steps before I have to stop to catch my breath.

Rich's Dorothy's Cobbler
I've grown up eating this cobbler my entire life. It is simple, quick, and delicious. It is my aunt's recipe. Her name was Dorothy (also my mother's name) so we always called it Rich's (my dad's brother) Dorothy's Cobbler. You just mix the batter, prepare whatever fruit you want, and dump the fruit on top of the batter.
1/4 cup butter (one half stick)
1/2 cup sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 cup flour
Mix and pour the dough into a greased pan and spread fruit on top.
2 cup fruit
1/4 cup sugar
1 cup fruit juice
Can use 1 can pie filling instead.
This can easily be doubled. Also any kind of fruit can be used and the fruit and the juice can be different.
Bake 45 min. @ 350 degrees.

Happy # 27 Meredith!
Last weekend was Meredith's 27th birthday. Valerie went to Crested Butte to help her celebrate. Happy Birthday to You! We're proud of you and the person you have become. We'll celebrate some more when we head up to Crested Butte in March.
